And it's spaghetti here too!!! It's gonna be Susan's version which pales in comparison to Mike's but I'll try to do my best. I am just thankful to have food to cook in my warm home!

Thanks y'all my head is better today but I'm still unable to read much. I am no longer bumping into walls and tables though.

I plan on trying this within the next few days. Shrimp is one of my favorite foods, and combined with bacon, even better. In the past, I have grilled skewers with bacon wrapped around shrimp which has been marinated in teriyaki sauce. Excellent!

INGREDIENTS
  • 1 lb shrimp about 20 cleaned, peeled, and deveined
  • 7 thick pieces of bacon cut into thirds
  • 4 tablespoons salted butter melted
  • 1/4 cup brown sugar
  • 1/2 tablespoon chipotle powder more if desired

INSTRUCTIONS
  • Line a baking sheet with foil. Preheat oven to 400F.
  • Wrap each piece of shrimp with 1/3 slice of bacon and secure with a toothpick. Place on the baking sheet.
  • Mix together the melted butter, brown sugar, and chipotle powder.
  • Brush each shrimp liberally with the butter mixture, using about 2/3 of it. Save the leftover butter mixture and set aside.
  • Bake for 15 minutes. Take the shrimp out of the oven and switch to broil.
  • Brush each shrimp one more time with the remaining butter mixture (stir before brushing).
  • Broil for 1-2 minutes or until bubbly.
  • Serve and enjoy!

Well it's leftover chicken or McDonalds finest burgers depending on how fast we get out of the MRI thing this afternoon and how famished George feels. He's been eating light all day so I'm thinking it might be a date under the golden arches to celebrate with.

Earlier today I was researching how those newfangled air fryers worked because Costco had one on sale that caught my interest. At the end of my research I realized that if I could cook something in my full sized convection oven on a rack the results would be pretty much the same as an air fryer. I found a cookie sheet with a rack that fits it to place food on for cooking for $20. Now I have an air fryer equivalent.

I think Andy's recipe above with the shrimp and bacon would probably be enhanced if prepared in an air fryer or convection oven on a rack.

First, I have to know what an air fryer is, and then I can comment on the potential improvements. Im always game for new ideas on cooking shrimp with bacon.

It will be chicken veggie soup for us again this evening. I have been hit fairly hard with the flu and my wonderful, loving dil is making some soup to bring over later. We are just blessed beyond measure to live near our son and dil, they are just the best!

I'm slow cooking some comfort food for tonight: Chuck roast with mashed potatoes and gravy and green beans. My best friend is coming over tomorrow and I will be cooking a roast chicken, stuffing, mashed potatoes and gravy and buttered peas. Afterwards, she will be helping me bake homemade cookies....peanut butter cookies, chocolate chip cookies and oatmeal cookies.

We are having leftover chicken from the other night. G's MRI went well, we see the neurosurgeon next week to find the results.
