    Default Cooking Advice :)

    Ladies, I just made a lemon ricotta cheesecake and am wondering if it would freeze well. Would anyone know ??

    Yeah, it should. If you do freeze it, take it out a day ahead of when you need it to thaw.

    Thanks Robert - It is a lower in fat cheesecake and I am skeptical of how it might do with being frozen. Only one way to find out though, lol

    I should of made it closer to when I needed it but I got such a burst of energy on the w/e that I baked and baked and baked some more, lol

    Woke up on Saturday and made a banana bread, then a carrot cake, then red velvet cupcakes, the lemon ricotta cheesecake and then apple pie. Last evening, I made a regular lemon cheese cake and a blueberry lemon sauce to go over top the cheesecake. I am bringing the regular cheesecake into work tomorrow and the other I plan to serve this coming w/e.

    Time for a rest, lol

    Anyone that knows me will say that my door is always open and I love to cook!! I like trying new recipes all the time so someone is usually my taste tester. Not always a great idea to try something new with company but I figure if it flops, there is always pizza, lol

    I've never frozen a ricotta cheesecake but I think it should freeze very good. I'd wrap it in foil.
    I'm like you Kathy, I love to cook and I enjoy cooking for people most anytime! Hubby likes to help me alot. He is a good cook on his own.... makes fantastic gumbo and jambalaya.

    Kathy, why are you freezing the cheesecake if it's for this weekend? Cheesecakes improve with aging.

    Anath - I normally make a cheesecake the day before I need it and have never made one this far ahead, lol .............. There is never any leftovers to freeze and so don't know how long a cheesecake would keep in the fridge. So, how long would a cheesecake keep sitting in the refrigerator?

    It says it keeps for up to 1 week in the refridgerator and 2 to 3 months in the freezer.

    Thanks Longing ........ that is good to know. I usually don't have anything left over or if there is, I give it to someone to bring home with them as I don't need the added calories.

    I have only in the last year acquired a taste for cream cheese where I can actually manage to eat a slice of cheesecake. I never ever liked it growing up and as much as I made cheesecake for a function or at someone's request, I never had any myself.

    Well I learned something new...lol. When I make my cakes, I let them age for 3-4 days and then we eat it for about a week. I didn't know they weren't supposed to stay in the fridge over a week

    Sis, I never heard of letting them age (only fruitcake).

    I don't think they would ever last past a week around here anyways so I have no worries on this front, lol
