    Unbeatable is Nestle's Toll House Chocolate Chip but another one of my next favorites:

    OLD FASHIONED QUAKER OATS FAMOUS
    OATMEAL COOKIES

    3/4 c. shortening, soft
    1 c. firmly packed brown sugar
    1/2 c. granulated sugar
    1 egg
    1/4 c. water
    1 tsp. vanilla
    1 c. sifted all-purpose flour
    1 tsp. salt
    1/2 tsp. soda
    3 c. oats, uncooked

    Beat shortening, sugars, egg, water and vanilla together until creamy. Stir together flour, salt and soda; add to creamed mixture, blend well. Stir in oats. Drop by teaspoonfuls onto greased cookie sheets. Bake in preheated moderate oven (350 degrees) for 12 to 15 minutes.
    (For variety, add chopped nutmeats, raisins, chocolate chips or coconut.) Makes 5 dozen.

    None here likes raisins much so a good sub is dried cranberries but of course you can get creative

    And use unsalted butter, unbleached flour and batter stays well in the frig for a few days, so a fresh batch can be cooked daily.

    No-Bake Chocolate, Peanut Butter & Oatmeal Cookies

    Yield: 2 to 3 dozen cookies

    Prep Time: 10 minutes | Cooling Time: 30 minutes

    ½ cup (1 stick) butter
    2 cups granulated sugar
    ½ cup milk
    4 tablespoons cocoa powder
    ½ cup peanut butter
    2 teaspoons vanilla extract
    3 cups quick-cooking oats

    1. Add the first four ingredients (through the cocoa powder) to a 4-quart saucepan.

    2. Bring to a rolling boil and let boil for 1 minute.

    3. Remove from heat.

    4. Stir in the peanut butter and vanilla until smooth, then stir in the oats.

    5. Drop by heaping tablespoons onto wax paper-lined baking sheets.

    6. Let cool until set.

    Sounds good and the no bake part also nutrition; I think I will save this one since I have a slight aversion to eggs at times. Never tried oatmeal with chocolate

    Sarah Bernhardt Cakes






    INGREDIENTS

    1 (8-ounce) can almond paste
    3 egg whites
    ¾ cup white sugar
    ½ teaspoon almond extract
    Dash of salt

    9 (1-ounce) squares semisweet chocolate
    ½ cup butter, unsalted
    3 egg yolks
    3 tablespoons rum or rum-extract
    6 (1-ounce) squares sweet cooking chocolate

    Preheat oven to 350 degrees.

    TO MAKE MACAROONS

    Line 2 baking sheets with ungreased aluminum foil.

    In large bowl combine almond paste, egg whites, sugar, almond extract and salt. Beat with electric mixer at medium speed until well blended.

    Spoon into pastry bag with #8 star tip. Press batter into 1- ¼ inch rounds. Bake 10 to 15 minutes, until pale golden. Remove foil to wire racks to cool. Carefully remove cookies and place on waxed paper lined pans.

    TO MAKE FILLING

    While cookies are baking; melt 9 squares semisweet chocolate in double boiler. Remove from heat and beat in ½ cup butter. Add egg yolks and rum until smooth. Let stand until slightly thickened (about ½ hour), stirring occasionally. Spread 1 teaspoon filling on bottom of each macaroon. Refrigerate filling side up on pan until firm, about 1 hour.

    TO MAKE GLAZE

    Work with small quantities of chocolate at a time. Melt sweet cooking chocolate in double boiler until smooth. Remove from heat. Test chocolate, it should feel lukewarm. Dip cookies filling side down rotating to coat completely. Place on waxed paper and refrigerate until set. Store tightly covered in refrigerator.

    Makes 5 dozen

    Just for you,

    Cheeseburgers in Paradise Cookies

    Cheeseburger In Paradise Cookies Recipe - Food.com - 89105

    2 (12 ounce) boxes vanilla wafers
    1 egg white
    1/4 cup sesame seed
    4 cups sifted powdered sugar
    4 -5 teaspoons milk
    1/2 teaspoon almond extract
    green food coloring
    yellow food coloring
    red food coloring
    1 cup shredded sweetened coconut
    2 (10 ounce) packages peppermint patties (anything resembling the girl scouts' "thin mints")

    Directions:Prep Time: 30 mins
    Total Time: 30 mins

    Place whole, perfect vanilla wafers on 2 trays; one with wafers facing up, the other with wafers facing down.

    2 Each tray should have the same number of wafers (35-40).

    3 Brush wafers (rounded side up) with egg white and sprinkle with sesame seeds.

    4 Set aside.

    5 To color coconut, place in small container with several drops of green food coloring.

    6 shake well and let sit.

    7 To make"cheese" frosting, whip powdered sugar and milk together til smooth.

    8 add yellow and red food coloring til desired orange tint is achieved.

    9 To assemble"cheeseburgers", use dab of frosting to glue peppermint cookies into place on to wafer (flat side up).

    10 This is your"burger".

    11 Now spread frosting"cheese" on and sprinkle with green coconut"lettuce".

    12 Dab with frosting again and top with sesame wafer.

    13 Repeat until all"burgers" are made.

    My favorite cookie recipe is anything the Girl Scouts are selling.

    When the kids were still in school, I used to make the Quaker oats cookies every week and added golden raisins and chocolate chips. They never got tired of them.

    It's okay Mike.. My mom always said that a way to a man's heart is through his stomach

    anyways, I'd rather ENJOY food instead of going through the extremes of being a health nut. Oh the pain of enjoying food just so deliciously terrible

    but honestly, I see it like this, I've always been in good shape "until" I hit 40 and then I just look at things and start to gain weight. So I think to myself, I'm getting too old to impress anyone so now I can enjoy food. Keep in mind though this body is the Lord's so I keep myself in check

    I used Karen's no-bake cookie recipe last night and they turned out great!
    I am doing a lot of cooking and baking now that the temps have cooled off. I always look forward to this time of the year.

    Christmas Sugar Cookies

    This is a tried and true. Made a half a batch last night. I used green & red colored sugar and multi-colored nonpareils.

    Ingredients

    * 1 1/2 cups butter, softened
    * 2 cups white sugar
    * 4 eggs
    * 1 teaspoon vanilla extract
    * 5 cups all-purpose flour
    * 2 teaspoons baking powder
    * 1 teaspoon salt

    Directions

    1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
    2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
    3. Bake 6 to 8 minutes in preheated oven. Cool completely.
