Because that's when God commanded the Israelites to circumcise their sons (Leviticus 12:3).

Vitamin K is at its peak at 8 days old. It is vital for blood clotting. The Lord seems to know what He is doing...now, did He create the human body with the clotting peak at 8 days because He knew He would be instituting a covenant symbol? Hmmm, interesting to think of the significance of the whole symbolism attached to this and the 8th day...

Circumcision of the covenant was made when the Lord appeared in a dream to abram had to circumcise all the males in the camp Genesis 17.

the circumcision of the Jewish baby is a figure of the circumcision of the heart that The Holy Spirit does in the believer....the 8th day also represent the NEW DAY....in Bible Numerics ( nothing to do with Kabbalah or the New Age numerology..)the Number of the FATHER is 777,the SON is 888 and THE HOLY SPIRIT is 999.
So in Jesus,spiritually we enter in the 8th day,the New Day of Grace and also the 8th millenium from creation,and then we will enter New Heavens and New hearth...in the Future Glorious Eternal State....so,The Lord wanted teach the lesson of being cut off from the flesh and enter the Walking in The Spirit........good things are ahead...
