    Default Simple, filling meal

    Picked up a shoulder roast marked down real cheap the other day at the store. Put it in the crock pot over night and shredded the meat today. Chopped up a bit of lettuce, opened up a can of black beans, chopped some Romas, shredded a bit of cheese and chopped some cilantro. Dragged out the burritos, sour cream and green taco sauce and we made MONDO huge fresh burritos. Filling, healthy, and about $2 per burrito. Plenty of leftovers, too. Love those crockpots......any other inexpensive meals going on? I'm truly interested because I totally suck as a cook.
    Are we there yet?

    I just cooked a shoulder roast in the crockpot too.... had enough left over to freeze for another day

    We buy roast beef in the deli section of a small grocery store (non chain store), because it is relatively cheap. We ask for the gravy as well. Then, hubby makes beef gravy with it by thickening it with flour. I make mashed potatos, and put the whole thing on toast. A very tasty open faced beef sandwich with mashed potatos and gravy for not that much per plate, as you only use about 3-4 thin slices of roast beef per plate. 1 lb of meat lasts us awhile.

    I'm sure they are good. But the problem I have (personally)with frozen dinners is that because of the MSG and other preservatives in them, I get headaches and a hung-over feeling. So, I try to make fresh stuff versus frozen. It's just not worth feeling ill over.

    Meal on the cheap?



    About 17¢ to 25¢ per packet. Guaranteed to give you one week's worth of sodium in a single packet.

    Or, spaghetti with homemade sauce. I use a can of diced tomatoes (or you can dice up fresh ones), a can of tomato sauce, some garlic powder, some garlic salt, onion powder, onion salt, parsley, basil, oregano, thyme, and so on. Spices can be a little pricey, but if you spend the money on the, they will usually last a few months.

    Also, if you make your own sauce, you can check the ingredients in the diced tomatoes and tomato sauce and find cans that have no sugar in them. No sugar = less sugar intake = lower calories overall.

    But if you want something quick on the cheap, get the Ramen and pass the sodium, please!

    I make tons of casseroles, and make sure to double every dinner recipes so that I do have leftovers.

    Oh, make sure you have a lighter on hand. My husband claims to the champion of that game. I really don't care to see.....
